Grilled Italian Marinated Lamb Chops

Lamb plays a significant role in Italy's culinary tradition; from the rolling hills of Tuscany to the southern beach of Calabria. In spirit of the holiday season, we stepped into Santo's kitchen to share his go-to grilled Italian marinade lamb chops. A simple recipe that will be part of your next antipasto! 

Ingredients: 

 -2 Racks of Lamb "frenched"

-1/2 Cup of Extra Virgin Olive Oil

-3 Garlic Cloves, rough chopped

-5 Springs of Fresh Rosemary

-Kosher Salt and Freshly Ground Pepper, to taste

-2 Calabrian Hot Chili's "peperoncino" 

-1 Tablespoon of Lemon Zest

-1 Fresh Lemon, quartered

Cooking time: 25 mins 

 

Instructions:

Step One: Cut the rack of lamb into individual chops (slice between rib bone).

Step Two: Roughly chop rosemary, garlic and Calabrian chili's and add to a food processor with lemon zest and extra virgin olive oil. Mix ingredients on the "chop" setting for an even consistency. Season with kosher salt and fresh ground pepper, to taste.

Step Three: In a bowl, combine individual lamb chops with marinade. Let the lamb sit in the marinade for a minimum of 30 mins (up to 3 hours recommended).

Step Four: Grill on Medium-High heat, approx. 4 minutes per side. We like to serve them medium to medium rare.

Step Five: Rest the grilled lamb chops on a plate, covered in aluminum foil for 6-8mins (this helps the meat maintain its juices)

Step Six: Plate lamb chops, garnish with fresh rosemary & lemon wedges.
